Skill Level: Intermediate to Advanced – Best performed by a Licensed Electrical Contractor, or Licensed HVAC Contractor.
Electrical Tools Required: Basic Electricians Pouch Hand Tools, Voltage Tester, and appropriate Safety Gear.

Honestly, I wear gloves that are really comfortable to protect my hands from cuts when there is a tough project, and when the weather gets cold. - Gloves that are Easy to Work with Tools
But aside from that I do my wiring work with bare hands, because it allows me to use my hand tools easier and faster. But – don’t let me talk you out of getting a nice comfortable pair of gloves to help protect your hands. - Gloves that are Flexible and Comfortable
I tend to forget that after doing this kind of work, we often get conditioned to the day to day activities and find ourselves with rougher skin and calluses, whereas a DIY’er may not have this type of condition. (I hope that makes sense.) - Gloves Alone Will Not Protect You from Shock
As far as preventing shock, the best prevention is to have a really good voltage tester to make sure the circuit has in fact been turned off. So be sure to get a good voltage tester. - Gloves for installing a New Thermostat
Now for your first project of installing a new thermostat, if it is for a conventional heating and air conditioner, then your going to be fine, because the thermostat works with low voltage – which is typically 24volts, so there will not be a shock hazard from the lower voltages. But it still would be good to turn off the circuit power to the HVAC unit anyway before you tackle the project.
